The easiest substitution for wheat flour is spelt flour. Spelt can be used in place of wheat at a 1:1 ratio. (e.g., 1 cup wheat flour : 1 cup spelt flour). Look for spelt flour in the ‘health foods section’ of your supermarket, or at most independent health food stores. However, please note that spelt does contain some gluten and may not be appropriate for those suffering from celiac disease. Check with your health provider before making this substitution.
Baking breads, cookies and muffins can also be made interesting and more healthful with the addition of soy and rice flours. When using these flours as replacements for wheat flour, you may find that some experimentation with quantities is necessary. Again, larger supermarkets are now including these flour alternatives in their ‘health foods sections’, and they can also be found at independent health food stores.
